Carrot Halwa is a traditional Indian dessert that is made with fresh carrots, ghee, milk, sugar and nuts. This rich dessert is sure to be the perfect finish to any special occasion.

Ingredients
- 3 cups grated carrots
- 2 tbsp ghee
- ⅛ tsp cardamom powder
- 3 cups whole milk
- 3 tbsp golden raisins
- 1 cup sugar
- ⅛ tsp saffron
- 3 tbsp roasted cashews (optional)
Instructions
- Add ghee to a heavy bottom pan and place on medium heat.
- Add powdered cardamom and stir until aromatic.
- Add grated carrots and saute for 2-3 minutes.
- Pour in milk and bring the mixture to a boil. Reduce the heat and continue to stir until the milk has reduced significantly.
- Add sugar, raisins and saffron to the mixture. Increase the heat and stir frequently as the halwa thickens. When fully cooked, the halwa should no longer stick to the sides of the pan.
- Garnish with roasted cashews and serve halwa warm or cold.
Notes
The sugar in this recipe can be adjusted as per taste.
