Avarakkai poriyal (broad beans stir-fry) is a quick and easy side dish made using urad dhal, shredded coconut, and of course, plenty of broad beans. This Chettinad dish is traditionally served with rice and sambar. Enjoy!

Ingredients

  • 5 cups broad beans (chopped)
  • ½ cup onion (chopped)
  • ¼ cup shredded coconut
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dhal
  • 3 red chilies (split in half)
  • 6 curry leaves
  • salt to taste

Instructions

  • Wash and chop broad beans. Set aside when done.
  • Heat oil in a pan. Once hot, add mustard seeds, urad dhal and red chilies.
  • Once mustard seeds crackle, add chopped onions and curry leaves. Saute for 30 seconds.
  • Next, add chopped broad beans and saute for 30 seconds. Add salt to taste.
  • Cover with a lid and cook on low flame for 2 minutes.
  • Add grated coconut and mix well.
  • Remove from flame and serve hot as a side dish with rice and sambar.
