Avarakkai poriyal (broad beans stir-fry) is a quick and easy side dish made using urad dhal, shredded coconut, and of course, plenty of broad beans. This Chettinad dish is traditionally served with rice and sambar. Enjoy!

Ingredients
5cupsbroad beans(chopped)
½cuponion(chopped)
¼cupshredded coconut
2tbspoil
1tspmustard seeds
1tspurad dhal
3red chilies (split in half)
6curry leaves
salt to taste
Instructions
Wash and chop broad beans. Set aside when done.
Heat oil in a pan. Once hot, add mustard seeds, urad dhal and red chilies.
Once mustard seeds crackle, add chopped onions and curry leaves. Saute for 30 seconds.
Next, add chopped broad beans and saute for 30 seconds. Add salt to taste.
Cover with a lid and cook on low flame for 2 minutes.
Add grated coconut and mix well.
Remove from flame and serve hot as a side dish with rice and sambar.
