Palak Paneer
Palak Paneer is a dish made using spinach and paneer cubes. This creamy curry can be served with rice, naan or roti.

Ingredients
- 1 lb baby spinach (I used organic spinach)
- 12 oz paneer (cut into small cubes)
- 5 garlic cloves (chopped)
- 6 green chilies (adjust to taste)
- 1 large red onion (chopped)
- ¼ cup tomatoes (finely chopped or puree)
- 1 tsp cumin seeds
- ¼ tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp garam masala powder
- 1 tbsp lemon juice
- 3 tbsp oil
- salt to taste
Instructions
- Boil water in a pan. Once hot, add spinach leaves and cook for 2 minutes. The leaves will start to shrink once cooked.
- Remove cooked spinach and add to a bowl with water and ice to prevent it from cooking further.
- Strain spinach and blend into a purée.
- Add oil to a pan. Once hot, add cumin seeds.
- Once cumin seeds start to sizzle and turn brown, add chopped garlic and green chilies. Sauté until the raw smell fades.
- Add chopped onion and sauté until translucent.
- Next, add finely chopped tomatoes and sauté for a minute.
- Then, add turmeric powder, coriander powder and garam masala powder. Mix well and cook for 1 minute.
- Add spinach purée and cook for 3-4 minutes. Add salt to taste.
- Add cubed paneer and boil for 2 minutes.
- Then, remove from flame and add lemon juice.
- Serve hot with rice, naan or roti.
