This Chettinad special dessert is made from dhal, rice, jaggery and ghee. It's sure to melt in your mouth, especially when eaten straight off the stove!

Ingredients
For aadi koozh flour:
2cupsurad dhal
¼cupraw rice
For aadi koozh:
1cupaadi koozh flour
1cupjaggery and/or palm sugar(I used 2 palm sugar cubes and 1 jaggery cube)
3cupswater
½cupghee
Instructions
For aadi koozh flour
Dry roast urad dhal until golden brown and aromatic. Set aside.
Dry roast the raw rice and set aside.
Using a blender, grind the raw rice and urad dhal into a fine powder.
Sieve the flour for any lumps and store in an airtight container.
For aadi koozh:
Melt palm sugar/jaggery in one cup of water. Once melted, filter to remove any impurities. Set aside.
Add aadi koozh flour to a heavy bottom pan and dry roast for 1 minute.
Then, add in the remaining water and mix well so there are no lumps.
Add the melted palm sugar/jaggery to this and continue mixing, making sure no lumps form.
Keep the pan on medium heat and add a little ghee at a time.
Mix until the aadi koozh thickens and no longer sticks to the sides or bottom of the pan.
