Ingredients
2cupsarisi upma(rice rava)
6cupswater
½cup carrots(cubed)
½cup peas
1cuponion(thinly sliced)
6green chilies(slit in half)
6curry leaves
4tbspoil
1tspmustard seeds
1tbspchanna dhal
½tspurad dhal
Instructions
Add oil to a pan. Once hot, add mustard seeds, urad dhal and channa dhal.
Once mustard seeds crackle, add onion and green chilies.
Saute until the raw onion smell fades.
Then add carrots, peas and curry leaves and saute for 2-3 minutes.
Boil water and add hot water to the veggies.
Then add salt to taste and cook vegetables. Don't fully cook vegetables, they should be half cooked.
Add arisi upma and cook on medium flame for 5-7 minutes. Mix occasionally to prevent upma from burning at the bottom of the pan.
Serve hot with sambar or chutney.
Notes
To make arisi upma, soak equal amounts of raw rice and parboiled rice in water for 2 hours. Then, drain the water and let the rice dry on a kitchen towel. When all the water has been absorbed, add small amounts of rice to a mixer and pulse into a coarse powder. Sift the broken rice to separate any powdered rice from the coarse powder. Let the arisi upma dry and store in an air tight container.
