A versatile vegetable like asparagus has so many uses and poriyal is just one of them! This tasty poriyal pairs well as a side dish with any meal.

Ingredients
2cupsasparagus(chopped)
1cuponion(chopped)
½tspred chili flakes
1tbspgrated coconut
½tspmustard seeds
½tspurad dhal
6curry leaves
1tbspoil
salt to taste
Instructions
Add oil to a pan. When hot, add mustard seeds and urad dhal.
Once mustard seeds crackle, add chopped onions and curry leaves.
Saute for 1 minute.
Add chopped asparagus and red chili flakes.
Saute for 1 minute.
Then, cover the pan using a lid and cook for 2 minutes. Be careful not to overcook the asparagus.
Add grated coconut and salt. Mix well.
Serve hot as a side dish with rice.
Notes
To chop asparagus: hold the end of the asparagus between your fingers and bend it until it breaks. Discard the thick, wooded end and chop the remaining stem and head.
