Avarakkai Kootu
Avarakkai Kootu is rich in fiber and protein. It's made with avarakkai (broad beans), dhal and spices. This dish pairs well with roti and rice.

urad dhal

ghee

tsp
oil
salt to taste
Instructions
Wash moong dhal and add it to a pressure cooker.
Add water, avarakkai, onions, green chillies, turmeric powder and salt to the pressure cooker.
Cook for 1 whistle and release pressure naturally.
Mix the kootu and adjust consistency by adding more water, if needed. Set aside.
Add oil to a small pan. Once hot, add cumin seeds and urad dhal.
Once the cumin seeds sizzle and urad dhal turns golden brown, add curry leaves.
Then, remove from heat and pour over kootu.
Add ghee to the kootu and serve with roti or rice.
