Made with black rice, coconut, cardamom and sugar, Kavuni Arisi is a simple yet popular Chettinad dessert. The black rice has a chewy texture and is very nutritious.

Ingredients
1cupblack rice
2½cupswater
⅓cupsugar(you can also use jaggery)
⅓cupgrated coconut
½tspcardamom powder
1tspghee
Instructions
Wash the rice and soak in 2½ cups of water. Soak overnight or for at least 6-8 hours.
Add the soaked rice and water used to soak the rice into a pressure cooker. Cook for 3-4 whistles.
Once the pressure is released, check to see if the rice is cooked. If not, add ½ cup water and cook for 1-2 more whistles.
Transfer the cooked rice to a pan.
Add grated coconut, sugar, cardamom powder and ghee. Cook for a few minutes on low flame. The kavuni arisi will start to loosen once the sugar is added.
