This fun twist to using a traditional Kuli Paniyaram mold is a great way to add some extra protein to your meals. It's so easy to make and a great recipe to have ready for when you need it the most!

Ingredients
10eggs
1cuponion(chopped)
½cupcapsicum/bell pepper(chopped)
¼cuptomato(chopped)
5green chilies(chopped finely) (adjust to taste)
15curry leaves(chopped)
½tsppepper powder
½tspcumin powder
¼tspturmeric powder
oil(to cook the paniyaram)
salt to taste
Instructions
Add eggs to a mixing bowl.
Using a whisk, beat the eggs and set aside once done.
Now, add turmeric powder, pepper powder, and cumin powder to the bowl.
Chop the onions, bell peppers, tomatoes, green chilies, and curry leaves. Add them to the mixing bowl.
Mix well and add salt.
Heat the paniyaram pan and add oil in each mold. Once hot, pour the egg mixture into each mold.
Cover with a lid and cook on medium flame for 2 minutes.
Using a wooden skewer stick, flip the paniyaram and cook on the other side. This should take 1-2 minutes.
Remove the paniyarams from the mold when they are golden brown on both sides.
Serve hot with spicy sauce or tomato ketchup.
Notes
Instead of adding in raw veggies, you can also sauté them for 2 minutes in a pan. Once cool, add them to the beaten egg mixture.
You can add shredded carrots, chopped cilantro, and any other veggies of your choice to this dish.
