Ingredients
3-4cupsspinach
½cuponion(chopped)
3red chili
2tbspgrated coconut(you can also use 2 tbsp coconut milk)
2tspoil
½tspmustard seeds
¼tsp urad dhal
3tbspwater from washed rice
salt to taste
Instructions
Add oil to a pan. Once hot, add mustard seeds, urad dhal and red chilies.
Once mustard seeds crackle, add onions and saute.
Add washed spinach and cook for 2-3 minutes.
Add water from washed rice and salt.
Pour in coconut milk and boil for 1 minute. If using grated coconut, blend grated coconut and ¼ cup warm water until smooth. Filter to extract coconut milk.
