Summa Kulambu (Also known as Verum Kulambu)
Made using onions, tomatoes, spices and a little jaggery, this kulambu will give you the spice, tang and sweet you need with your idlis and dosas.

Ingredients

small marble sized tamarind
(½ cup soaked in water)

mustard seeds

urad dhal

methi seeds

asafoetida
(also known as hing or perungayam)

oil
salt to taste
Instructions
Add oil to a pan. Once hot, add mustard seeds, urad dhal, methi seeds, red chilies and asafoetida.
Once mustard seeds crackle, add onion, garlic and curry leaves. Saute until the raw onion smell fades.
Add turmeric powder, chili powder, tomatoes and salt.
Once tomatoes soften, add tamarind extract.
Pour in water and cover pan with a lid. Boil for 5 minutes.
Add jaggery and oil. Boil for 1 minute.
Serve hot as a side dish for idli or dosa.
