A versatile vegetable like asparagus has so many uses and poriyal is just one of them! This tasty poriyal pairs well as a side dish with any meal.

Ingredients
- 2 cups asparagus (chopped)
- 1 cup onion (chopped)
- ½ tsp red chili flakes
- 1 tbsp grated coconut
- ½ tsp mustard seeds
- ½ tsp urad dhal
- 6 curry leaves
- 1 tbsp oil
- salt to taste
Instructions
- Add oil to a pan. When hot, add mustard seeds and urad dhal.
- Once mustard seeds crackle, add chopped onions and curry leaves.
- Saute for 1 minute.
- Add chopped asparagus and red chili flakes.
- Saute for 1 minute.
- Then, cover the pan using a lid and cook for 2 minutes. Be careful not to overcook the asparagus.
- Add grated coconut and salt. Mix well.
- Serve hot as a side dish with rice.
Notes
- To chop asparagus: hold the end of the asparagus between your fingers and bend it until it breaks. Discard the thick, wooded end and chop the remaining stem and head.
