Arisi Upma

Ingredients
- 2 cups arisi upma (rice rava)
- 6 cups water
- ½ cup carrots (cubed)
- ½ cup peas
- 1 cup onion (thinly sliced)
- 6 green chilies (slit in half)
- 6 curry leaves
- 4 tbsp oil
- 1 tsp mustard seeds
- 1 tbsp channa dhal
- ½ tsp urad dhal
Instructions
- Add oil to a pan. Once hot, add mustard seeds, urad dhal and channa dhal.
- Once mustard seeds crackle, add onion and green chilies.
- Saute until the raw onion smell fades.
- Then add carrots, peas and curry leaves and saute for 2-3 minutes.
- Boil water and add hot water to the veggies.
- Then add salt to taste and cook vegetables. Don't fully cook vegetables, they should be half cooked.
- Add arisi upma and cook on medium flame for 5-7 minutes. Mix occasionally to prevent upma from burning at the bottom of the pan.
- Serve hot with sambar or chutney.
Notes
- To make arisi upma, soak equal amounts of raw rice and parboiled rice in water for 2 hours. Then, drain the water and let the rice dry on a kitchen towel. When all the water has been absorbed, add small amounts of rice to a mixer and pulse into a coarse powder. Sift the broken rice to separate any powdered rice from the coarse powder. Let the arisi upma dry and store in an air tight container.
