Spinach (Keerai) Mandi
Made with healthy greens, rice water and coconut milk, this spinach mandi will quickly become your favorite.

Ingredients
- 3-4 cups spinach
- ½ cup onion (chopped)
- 3 red chili
- 2 tbsp grated coconut (you can also use 2 tbsp coconut milk)
- 2 tsp oil
- ½ tsp mustard seeds
- ¼ tsp urad dhal
- 3 tbsp water from washed rice
- salt to taste
Instructions
- Add oil to a pan. Once hot, add mustard seeds, urad dhal and red chilies.
- Once mustard seeds crackle, add onions and saute.
- Add washed spinach and cook for 2-3 minutes.
- Add water from washed rice and salt.
- Pour in coconut milk and boil for 1 minute. If using grated coconut, blend grated coconut and ¼ cup warm water until smooth. Filter to extract coconut milk.
- Serve hot with rice
