For aadi koozh flour:
- 2 cups urad dhal
- ¼ cup raw rice
For aadi koozh:
- 1 cup aadi koozh flour
- 1 cup jaggery and/or palm sugar (I used 2 palm sugar cubes and 1 jaggery cube)

Instructions
For aadi koozh flour
- Dry roast urad dhal until golden brown and aromatic. Set aside.
- Dry roast the raw rice and set aside.
- Using a blender, grind the raw rice and urad dhal into a fine powder.
- Sieve the flour for any lumps and store in an airtight container.
For aadi koozh:
- Melt palm sugar/jaggery in one cup of water. Once melted, filter to remove any impurities. Set aside.
- Add aadi koozh flour to a heavy bottom pan and dry roast for 1 minute.
- Then, add in the remaining water and mix well so there are no lumps.
- Add the melted palm sugar/jaggery to this and continue mixing, making sure no lumps form.
- Keep the pan on medium heat and add a little ghee at a time.
- Mix until the aadi koozh thickens and no longer sticks to the sides or bottom of the pan.
- Serve hot.
