Asparagus Poriyal

A versatile vegetable like asparagus has so many uses and poriyal is just one of them! This tasty poriyal pairs well as a side dish with any meal.

Ingredients

  • 2 cups asparagus (chopped)
  • 1 cup onion (chopped)
  • ½ tsp red chili flakes
  • 1 tbsp grated coconut
  • ½ tsp mustard seeds
  • ½ tsp urad dhal
  • 6 curry leaves
  • 1 tbsp oil
  • salt to taste

Instructions

  • Add oil to a pan. When hot, add mustard seeds and urad dhal.
  • Once mustard seeds crackle, add chopped onions and curry leaves.
  • Saute for 1 minute.
  • Add chopped asparagus and red chili flakes.
  • Saute for 1 minute.
  • Then, cover the pan using a lid and cook for 2 minutes. Be careful not to overcook the asparagus.
  • Add grated coconut and salt. Mix well.
  • Serve hot as a side dish with rice.

Notes

  • To chop asparagus: hold the end of the asparagus between your fingers and bend it until it breaks. Discard the thick, wooded end and chop the remaining stem and head.
