Ingredients

  • 2 cups Basmati rice
  • cups water
  • 2 cups onion (thinly sliced)
  • 5 tbsp oil
  • 1 tbsp ghee
  • 1 bay leaf
  • 3 inch cinnamon stick
  • 2 cardamom
  • 4 cloves
  • 1 star anise
  • ¼ cup cilantro
  • ¼ cup mint leaves
  • 2 tbsp fried onion

For Marination:

  • 6 drumstick pieces
  • ½ tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp Biryani masala powder
  • 1 tbsp ginger garlic paste
  • cup mint leaves
  • cup cilantro
  • ½ cup yogurt
  • 1 tbsp lemon juice
  • salt to taste

Instructions

  • Add all ingredients under "For Marination" except the chicken drumsticks into a bowl.
  • Make slits on the chicken drumsticks. Add the chicken to the mixing bowl and toss to coat the pieces in the masala paste. Set aside for at least 1 hour.
  • Wash Basmati rice and soak in water for 30 minutes.
  • Add oil and ghee to a pressure cooker. Once hot, add cinnamon, bay leaf, cloves, cardamom and star anise.
  • Once they become brown, add onions. Saute until golden brown.
  • Add the marinated chicken and saute for 2-3 minutes.
  • Next, add 1 cup of water and close the cooker. Cook for 5 minutes.
  • Pour in the remaining water and boil. Check for salt and spice and adjust as needed.
  • Add soaked rice, chopped mint, cilantro and fried onions. Mix gently.
  • Pressure cook on medium flame for 1 whistle. Release pressure naturally.
  • Serve hot with raita.
