Beans Poriyal is one of the quickest side dishes you can make when you're in a rush. Just chop and saute some beans, add some spices and salt and you're on your way to a tasty meal.

Ingredients

  • 4 cups beans (chopped)
  • 1 medium sized onion (chopped)
  • 6 curry leaves
  • 1 tsp chili flakes
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dhal
  • salt to taste

Instructions

  • Add oil to a pan. Once hot, add mustard seeds and urad dhal.
  • Once mustard seeds start to crackle, add chopped onions and curry leaves.
  • Saute for 2 minutes. The raw smell should fade.
  • Add chili flakes and salt. Mix well.
  • Cover pan with a lid and cook for 3-4 minutes. Be careful not to overcook the beans.
  • Remove lid and cook on high flame for 1 minute.
  • Serve hot as a side dish.
