Kovakkai Masala
Kovakkai Masala (ivy gourd/tindora) is a great dish to eat with rice and curry. This crunchy and tasty side will keep you cooking this dish often!

Ingredients
- 4 cups kovakkai (cut lengthwise)
- 1 medium onion (chopped)
- 1 tomato (chopped)
- ½ tsp turmeric powder
- 2 tsp masala powder
- 1 tsp coriander powder
- 1 tsp mustard seeds
- 10 curry leaves
- 3 tbsp oil
- salt to taste
Instructions
- Wash and cut kovakkai lengthwise.
- Add oil to a pan. Once hot, add mustard seeds.
- Once the mustard seeds crackle, add chopped onions and saute for 2 minutes. The raw smell should fade.
- Add turmeric powder, masala powder, chili powder and coriander powder. Mix well.
- Add tomatoes and saute until soft.
- Then, add kovakkai, curry leaves and salt. Saute for 2-3 minutes.
- Cover with a lid and cook on medium flame for 2 minutes. Remove the lid and cook for 2 minutes.
- Continue cooking the kovakkai until well done. Check for salt and spice and adjust as needed.
- Serve hot as a side dish.
