Kovakkai Masala
Kovakkai Masala (ivy gourd/tindora) is a great dish to eat with rice and curry. This crunchy and tasty side will keep you cooking this dish often!

Ingredients

kovakkai
(cut lengthwise)

medium onion
(chopped)

tomato
(chopped)

turmeric powder

mustard seeds

salt to taste
Instructions
Wash and cut kovakkai lengthwise.
Add oil to a pan. Once hot, add mustard seeds.
Once the mustard seeds crackle, add chopped onions and saute for 2 minutes. The raw smell should fade.
Add turmeric powder, masala powder, chili powder and coriander powder. Mix well.
Add tomatoes and saute until soft.
Then, add kovakkai, curry leaves and salt. Saute for 2-3 minutes.
Cover with a lid and cook on medium flame for 2 minutes. Remove the lid and cook for 2 minutes.
Continue cooking the kovakkai until well done. Check for salt and spice and adjust as needed.
Serve hot as a side dish.
