Kovakkai Masala

Kovakkai Masala (ivy gourd/tindora) is a great dish to eat with rice and curry. This crunchy and tasty side will keep you cooking this dish often!

Ingredients

  • 4 cups kovakkai (cut lengthwise)
  • 1 medium onion (chopped)
  • 1 tomato (chopped)
  • ½ tsp turmeric powder
  • 2 tsp masala powder
  • 1 tsp coriander powder
  • 1 tsp mustard seeds
  • 10 curry leaves
  • 3 tbsp oil
  • salt to taste

Instructions

  • Wash and cut kovakkai lengthwise.
  • Add oil to a pan. Once hot, add mustard seeds.
  • Once the mustard seeds crackle, add chopped onions and saute for 2 minutes. The raw smell should fade.
  • Add turmeric powder, masala powder, chili powder and coriander powder. Mix well.
  • Add tomatoes and saute until soft.
  • Then, add kovakkai, curry leaves and salt. Saute for 2-3 minutes.
  • Cover with a lid and cook on medium flame for 2 minutes. Remove the lid and cook for 2 minutes.
  • Continue cooking the kovakkai until well done. Check for salt and spice and adjust as needed.
  • Serve hot as a side dish.
