Ingredients

  • 4 cups cauliflower
  • 1 large onion (2 cups cubed)
  • 1 tomato (cubed)
  • 1 tbsp cilantro
  • 2 tsp ginger garlic paste
  • ½ tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp cumin seeds
  • 1 tsp Kasmiri red chili powder (adjust to taste)
  • 1 tsp Kitchen King Masala (optional) (can also use ½ tsp of garam masala as a substitute)
  • ½ tsp garam masala
  • 3 tbsp oil
  • 4 cups hot water
  • salt to taste

Instructions

  • Cut the cauliflower into florets.
  • Immerse them in hot water for 10 minutes. After 10 minutes, drain the excess water and set aside.
  • Add oil to a pan. Once hot, add cumin seeds.
  • Once aromatic, add onions and sauté until translucent.
  • Now, add ginger garlic paste and sauté for 2-3 minutes. The raw smell should fade.
  • Next add and sauté the tomatoes for 1 minute.
  • Mix in turmeric powder, coriander powder, Kasmiri red chili powder, and garam masala powder. Cook for 1 minute.
  • Then, add the cauliflower florets and mix well. Cook on medium to high heat.
  • Add the Kitchen King Masala, if using, or another ½ tsp of garam masala powder.
  • Mix well and add salt to taste.
  • Cook for 4-5 minutes. Let the masalas absorb into the cauliflower. Be careful not to overcook the cauliflower, it should still be a little crunchy.
  • Add cilantro and lightly mix.
  • Serve hot as a side dish for any meal of your choice.
