This quick and easy Cauliflower Masala is the perfect for when you're cooking in a rush. With just a few spices and a quick toss, you'll have a tasty side dish to complement your main meal.

Ingredients
4cupscauliflower
1large onion(2 cups cubed)
1tomato(cubed)
1tbspcilantro
2tspginger garlic paste
½tspturmeric powder
2tspcoriander powder
1tspcumin seeds
1tspKasmiri red chili powder(adjust to taste)
1tspKitchen King Masala(optional) (can also use ½ tsp of garam masala as a substitute)
½tspgaram masala
3tbspoil
4cupshot water
salt to taste
Instructions
Cut the cauliflower into florets.
Immerse them in hot water for 10 minutes. After 10 minutes, drain the excess water and set aside.
Add oil to a pan. Once hot, add cumin seeds.
Once aromatic, add onions and sauté until translucent.
Now, add ginger garlic paste and sauté for 2-3 minutes. The raw smell should fade.
Next add and sauté the tomatoes for 1 minute.
Mix in turmeric powder, coriander powder, Kasmiri red chili powder, and garam masala powder. Cook for 1 minute.
Then, add the cauliflower florets and mix well. Cook on medium to high heat.
Add the Kitchen King Masala, if using, or another ½ tsp of garam masala powder.
Mix well and add salt to taste.
Cook for 4-5 minutes. Let the masalas absorb into the cauliflower. Be careful not to overcook the cauliflower, it should still be a little crunchy.
Add cilantro and lightly mix.
Serve hot as a side dish for any meal of your choice.
