Muttai (Egg) Paniyaram
This fun twist to using a traditional Kuli Paniyaram mold is a great way to add some extra protein to your meals. It's so easy to make and a great recipe to have ready for when you need it the most!
Servings: 6
Ingredients
- 10 eggs
- 1 cup onion (chopped)
- ½ cup capsicum/bell pepper (chopped)
- ¼ cup tomato (chopped)
- 5 green chilies (chopped finely) (adjust to taste)
- 15 curry leaves (chopped)
- ½ tsp pepper powder
- ½ tsp cumin powder
- ¼ tsp turmeric powder
- oil (to cook the paniyaram)
- salt to taste
Instructions
- Add eggs to a mixing bowl.
- Using a whisk, beat the eggs and set aside once done.
- Now, add turmeric powder, pepper powder, and cumin powder to the bowl.
- Chop the onions, bell peppers, tomatoes, green chilies, and curry leaves. Add them to the mixing bowl.
- Mix well and add salt.
- Heat the paniyaram pan and add oil in each mold. Once hot, pour the egg mixture into each mold.
- Cover with a lid and cook on medium flame for 2 minutes.
- Using a wooden skewer stick, flip the paniyaram and cook on the other side. This should take 1-2 minutes.
- Remove the paniyarams from the mold when they are golden brown on both sides.
- Serve hot with spicy sauce or tomato ketchup.
Notes
- Instead of adding in raw veggies, you can also sauté them for 2 minutes in a pan. Once cool, add them to the beaten egg mixture.
- You can add shredded carrots, chopped cilantro, and any other veggies of your choice to this dish.
