Summa Kulambu (Also known as Verum Kulambu)

Made using onions, tomatoes, spices and a little jaggery, this kulambu will give you the spice, tang and sweet you need with your idlis and dosas.

Ingredients

  • ¾ cup onion (chopped)
  • 1 cup tomato (chopped)
  • 2 garlic cloves
  • 6 curry leaves
  • 2 red chilies
  • ¼ tsp turmeric powder
  • 1 tsp chili powder (adjust to taste)
  • 1 small marble sized tamarind (½ cup soaked in water)
  • ½ tsp jaggery
  • ½ tsp mustard seeds
  • ½ tsp urad dhal
  • ½ tsp methi seeds
  • ¼ tsp asafoetida (also known as hing or perungayam)
  • 2 cups water
  • 1 tbsp oil
  • salt to taste

Instructions

  • Add oil to a pan. Once hot, add mustard seeds, urad dhal, methi seeds, red chilies and asafoetida.
  • Once mustard seeds crackle, add onion, garlic and curry leaves. Saute until the raw onion smell fades.
  • Add turmeric powder, chili powder, tomatoes and salt.
  • Once tomatoes soften, add tamarind extract.
  • Pour in water and cover pan with a lid. Boil for 5 minutes.
  • Add jaggery and oil. Boil for 1 minute.
  • Serve hot as a side dish for idli or dosa.
