Summa Kulambu (Also known as Verum Kulambu)
Made using onions, tomatoes, spices and a little jaggery, this kulambu will give you the spice, tang and sweet you need with your idlis and dosas.

Ingredients
- ¾ cup onion (chopped)
- 1 cup tomato (chopped)
- 2 garlic cloves
- 6 curry leaves
- 2 red chilies
- ¼ tsp turmeric powder
- 1 tsp chili powder (adjust to taste)
- 1 small marble sized tamarind (½ cup soaked in water)
- ½ tsp jaggery
- ½ tsp mustard seeds
- ½ tsp urad dhal
- ½ tsp methi seeds
- ¼ tsp asafoetida (also known as hing or perungayam)
- 2 cups water
- 1 tbsp oil
- salt to taste
Instructions
- Add oil to a pan. Once hot, add mustard seeds, urad dhal, methi seeds, red chilies and asafoetida.
- Once mustard seeds crackle, add onion, garlic and curry leaves. Saute until the raw onion smell fades.
- Add turmeric powder, chili powder, tomatoes and salt.
- Once tomatoes soften, add tamarind extract.
- Pour in water and cover pan with a lid. Boil for 5 minutes.
- Add jaggery and oil. Boil for 1 minute.
- Serve hot as a side dish for idli or dosa.
