Aloo Gobi Masala
Made from potatoes and cauliflower, this side dish has great texture and is sure to become a comfort food along with any rice, roti or naan.

Ingredients

(cubed)

(cut into florets)

tomato puree

onion
(chopped)

ginger garlic paste

tsp
turmeric powder

tsp
red chili powder
(adjust to taste)

tsp
Kashmiri red chili powder
1
tbsp
coriander powder
½
tsp
garam masala powder
3
tbsp
oil
1
tsp
cumin seeds
salt to taste
Instructions
Add oil to a pan. When hot, add cumin seeds.
When cumin seeds sizzle, add chopped onion and saute for 2-3 minutes.
Add ginger garlic paste and saute until raw smell fades.
Next, add turmeric powder, chili powder, Kashmiri red chili powder and coriander powder.
Saute for 1 minute.
Add potatoes and mix well. Place lid over pan and cook potatoes for 5-7 minutes or until half cooked.
Add cauliflower florets and mix.
Then add tomato puree, garam masala and salt.
Cook without lid for 5-7 minutes or until the potatoes and cauliflower are fully cooked. Be careful not to over cook the cauliflower florets.
Serve hot as a side dish for roti, naan or rice.
