Beetroot Keerai Poriyal
A quick way to use any leftover beet greens, this nutritious dish comes with a hearty crunch in every bite.

Ingredients
1
beetroot keerai bunch
(from about 4-5 beetroots)
1
medium onion
(chopped)
2-3
dried red chilies
(adjust to taste)
1
tsp
mustard seeds
½
tsp
urad dhal

tbsp
oil
salt to taste
Instructions
Chop beet greens and wash thoroughly. Set aside.
Add oil to a pan. Once hot, add urad dhal, mustard seeds and red chilies.
When the mustard seeds start to crackle, add chopped onions and saute for 1 minute.
Add chopped beet greens and saute for 1 minute.
Add salt to taste and mix well.
Serve hot.
