Beetroot Keerai Poriyal

A quick way to use any leftover beet greens, this nutritious dish comes with a hearty crunch in every bite.

Ingredients

  • 1 beetroot keerai bunch (from about 4-5 beetroots)
  • 1 medium onion (chopped)
  • 2-3 dried red chilies (adjust to taste)
  • 1 tsp mustard seeds
  • ½ tsp urad dhal
  • 2 tbsp oil
  • salt to taste

Instructions

  • Chop beet greens and wash thoroughly. Set aside.
  • Add oil to a pan. Once hot, add urad dhal, mustard seeds and red chilies.
  • When the mustard seeds start to crackle, add chopped onions and saute for 1 minute.
  • Add chopped beet greens and saute for 1 minute.
  • Add salt to taste and mix well.
  • Serve hot.
