Brussels Sprout Poriyal

This South Indian spin on brussels sprouts is sure to please people of all ages as every hearty crunch comes with a lot of yum.

Ingredients

  • 8 cups brussels sprouts (chopped)
  • ¼ cup moong dhal
  • 6 green chilies (slit in half)
  • 1 tbsp urad dhal
  • 1 tsp mustard seeds
  • 6 curry leaves
  • 2 tsp oil
  • salt to taste

Instructions

  • Wash moong dhal and soak in water for at least 30 minutes.
  • In a pan, add oil. Once hot, add urad dhal and mustard seeds.
  • Once mustard seeds crackle, add green chilies, brussels sprouts and curry leaves.
  • Add soaked moong dhal and cook for 3-4 minutes. Be careful not to overcook the brussels sprouts.
  • Add salt and mix well.
  • Serve hot as a side dish with rice.
