Poori Potato Masala

Made with mashed potatoes and spices, this Potato Masala will surely make you enjoy every bite of your poori.

Ingredients

  • 6 medium potatoes
  • 2 medium onions (thinly sliced)
  • 1 tomato (finely chopped)
  • 8 green chilies (slit lengthwise) (adjust to taste)
  • ½ tsp chili powder (adjust to taste)
  • 1 tsp grated ginger (optional)
  • ¼ tsp turmeric powder
  • 10 curry leaves
  • 1 tsp mustard seeds
  • 1 tsp urad dhal
  • 1 tbsp channa dhal
  • 3 cups water (for cooking potatoes)
  • 3 tbsp oil
  • salt to taste

Instructions

  • Wash potatoes and cut into quarters.
  • Add potatoes to pressure cooker. Pour water and cook for 1 whistle. Let the pressure release naturally.
  • Once cooked, peel the skin from the potatoes and set aside.
  • Add oil to a pan. Once hot, add mustard seeds, urad dhal and channa dhal.
  • Once mustard seeds crackle, add onions, green chilies and ginger (if using).
  • Saute for 2-3 minutes. The raw smell should fade.
  • Add turmeric powder and curry leaves. Saute for 1 minute.
  • Next, add tomatoes and saute for 1 minute.
  • Then, add potatoes and mash them with a masher. Add salt and chili powder.
  • Cook for 3-4 minutes.
  • Serve hot with poori.
