Poori Potato Masala
Made with mashed potatoes and spices, this Potato Masala will surely make you enjoy every bite of your poori.

medium potatoes

medium onions
(thinly sliced)

(finely chopped)

green chilies
(slit lengthwise) (adjust to taste)

chili powder

mustard seeds

urad dhal

tbsp
channa dhal

water
(for cooking potatoes)

oil
salt to taste
Instructions
Wash potatoes and cut into quarters.
Add potatoes to pressure cooker. Pour water and cook for 1 whistle. Let the pressure release naturally.
Once cooked, peel the skin from the potatoes and set aside.
Add oil to a pan. Once hot, add mustard seeds, urad dhal and channa dhal.
Once mustard seeds crackle, add onions, green chilies and ginger (if using).
Saute for 2-3 minutes. The raw smell should fade.
Add turmeric powder and curry leaves. Saute for 1 minute.
Next, add tomatoes and saute for 1 minute.
Then, add potatoes and mash them with a masher. Add salt and chili powder.
Cook for 3-4 minutes.
Serve hot with poori.
