Kale Thuvattal is a tasty way to incorporate these healthy greens into your meals. It's quick to make and will make this hearty green a family favorite.

Ingredients

  • 1 lb kale (about 1 bunch)
  • 3 tbsp moong dhal (soaked in 1 cup water)
  • 3 dry red chilies (adjust to taste)
  • 2 tbsp oil
  • 1 tsp urad dhal
  • ½ tsp mustard seeds
  • salt to taste

Instructions

  • Wash moong dhal and soak in 1 cup water for at least ½ hour.
  • Wash kale leaves thoroughly. Remove the thick stem in the middle and chop into small pieces. Set aside.
  • Add oil to a frying pan. Once hot, add mustard seeds, urad dhal and dry red chilies.
  • Once mustard seeds crackle, add chopped kale leaves.
  • Saute for 1 minute and add soaked moong dhal.
  • Saute for 2-3 minutes and add salt to taste.
  • Then, cook on medium flame until the moong dhal and kale are well cooked.
  • Cook for 2-3 minutes. All the water should be absorbed.
  • Serve hot as a side dish.
