This Indian-style quick dish is meant for the coconut lovers out there. It's great flavor mixed with crunchy cashews will surely keep you coming back for more.

Ingredients
1½cuprice( I used Seeraga Samba rice but Basmati rice also works well)
3cupswater
1cupgrated coconut
4green chilies(adjust to taste)
2tbspcashews
1tbspchanna dhal
1tspurad dhal
1 tspmustard seeds
6curry leaves
2tbspoil
salt to taste
Instructions
Wash rice and add to pressure cooker. Add 3 cups of water and salt to taste.
Cook for one whistle and let pressure release naturally. Set aside and cool to room temperature.
In a pan, add oil. When hot, add mustard seeds, urad dhal, channa dhal, cashews, green chilies and curry leaves.
Saute until cashews turn golden brown.
When mustard seeds crackle add grated coconut and saute for 2 minutes.
Add cooked rice and mix thoroughly.
Serve hot and with curry of your choice. It tastes great on its own too.
