Coconut Rice

This Indian-style quick dish is meant for the coconut lovers out there. It's great flavor mixed with crunchy cashews will surely keep you coming back for more.

Ingredients

  • cup rice ( I used Seeraga Samba rice but Basmati rice also works well)
  • 3 cups water
  • 1 cup grated coconut
  • 4 green chilies (adjust to taste)
  • 2 tbsp cashews
  • 1 tbsp channa dhal
  • 1 tsp urad dhal
  • 1 tsp mustard seeds
  • 6 curry leaves
  • 2 tbsp oil
  • salt to taste

Instructions

  • Wash rice and add to pressure cooker. Add 3 cups of water and salt to taste.
  • Cook for one whistle and let pressure release naturally. Set aside and cool to room temperature.
  • In a pan, add oil. When hot, add mustard seeds, urad dhal, channa dhal, cashews, green chilies and curry leaves.
  • Saute until cashews turn golden brown.
  • When mustard seeds crackle add grated coconut and saute for 2 minutes.
  • Add cooked rice and mix thoroughly.
  • Serve hot and with curry of your choice. It tastes great on its own too.
