Dry roast the cracked wheat in a heavy bottom pan. Roast on medium flame for 2-3 minutes and set aside to cool.
Add oil to the same pan. Once hot, add mustard seeds, urad dhal, channa dhal and fennel seeds.
Once the mustard seeds start to crackle, add cashews and roast until golden brown.
Next, add the cinnamon stick to the pan and roast for 1 minute.
Now, add the chopped onions, garlic, ginger, green chilies, curry leaves, and ½ tsp of salt. Sauté until the raw smell of the onions and garlic fades.
Mix in turmeric powder.
Then, add chopped beans, carrots, peas and tomatoes to the pan. Sauté for 2-3 minutes on medium flame.
Pour in 3 cups of hot water. Add salt and let the water boil.
Once the water is boiling, slowly add the roasted cracked wheat while mixing to prevent lumps from forming.
Mix in cilantro and cover with the pan with a lid on medium flame. Cook for 3-4 minutes or until well cooked.
Remove the lid and gently mix the khichdi. Add ghee, if using, and serve hot.
