Cracked Wheat Khichdi

Ingredients

  • 1 cup cracked wheat (wheat rava)
  • 1 onion (1½ cups chopped)
  • 1 tomato (1 cup chopped)
  • 6 green chillies (split lengthwise) (adjust to taste)
  • 1 inch ginger (grated)
  • 4 cloves garlic (cut lengthwise)
  • 3 sprigs curry leaves
  • ½ cup carrot (cubed)
  • ½ cup peas (I used frozen green peas)
  • ½ cup beans (chopped)
  • 1 tsp mustard seeds
  • ½ tsp fennel seeds
  • 1 tsp urad dhal
  • 2 tbsp channa dhal
  • 3 tbsp cashews (split into halves)
  • 1 inch cinnamon stick
  • ½ tsp turmeric powder
  • 3 cups water
  • 1 tbsp ghee (optional)
  • 2 tbsp cilantro (chopped)
  • 3 tbsp oil
  • salt to taste

Instructions

  • Dry roast the cracked wheat in a heavy bottom pan. Roast on medium flame for 2-3 minutes and set aside to cool.
  • Add oil to the same pan. Once hot, add mustard seeds, urad dhal, channa dhal and fennel seeds.
  • Once the mustard seeds start to crackle, add cashews and roast until golden brown.
  • Next, add the cinnamon stick to the pan and roast for 1 minute.
  • Now, add the chopped onions, garlic, ginger, green chilies, curry leaves, and ½ tsp of salt. Sauté until the raw smell of the onions and garlic fades.
  • Mix in turmeric powder.
  • Then, add chopped beans, carrots, peas and tomatoes to the pan. Sauté for 2-3 minutes on medium flame.
  • Pour in 3 cups of hot water. Add salt and let the water boil.
  • Once the water is boiling, slowly add the roasted cracked wheat while mixing to prevent lumps from forming.
  • Mix in cilantro and cover with the pan with a lid on medium flame. Cook for 3-4 minutes or until well cooked.
  • Remove the lid and gently mix the khichdi. Add ghee, if using, and serve hot.
