Ennai Vazhakkai
Made from cut plantain and a variety of spices, Ennai Vazhakkai is a great side dish to have with rice.

(green plantain)

(adjust to taste)

Instructions
Cut vazhakkai and add it to water to prevent browning.
Add oil to a pan. Once hot, add mustard seeds and garlic.
Once mustard seeds crackle, strain the vazhakkai and add to the pan.
Add turmeric powder, masala powder and salt. Mix well.
Dry roast vazhakkai until well cooked.
Add curry leaves and saute for 2 minutes.
Serve hot with yogurt rice or as a side dish.
