Pavakkai (Bitter Gourd) is a bitter vegetable that many tend to shy away from. These crispy chips will change your feelings towards the vegetable and keep you munching, one chip after the other.

Ingredients
6pavakkai (bitter gourd)sliced
¼tspturmeric powder
1tspKashmiri red chili powder(adjust to taste)
1tspcoriander powder
2tbsprice flour
¼cupbesan flour(chickpea/garbanzo flour)
1tbspcorn flour
½tspajwain
¼cupwater
salt to taste
cooking oil spray
Instructions
Add the sliced pavakkai to a mixing bowl.
Add turmeric powder, Kashmiri red chili powder, coriander powder, and salt to the bowl.
Mix the pavakkai slices very well.
In a separate bowl, add rice flour, besan flour, corn flour and ajwain. Add water and mix well. Transfer this to the bowl with the pavakkai.
Mix well. The slices should be well coated. Set aside for 10 minutes.
Preheat the oven to 400 degrees. Line a baking tray with parchment paper.
Arrange the slices on the tray. Spray the cooking oil over the slices.
Place the tray in the preheated oven and bake for 25 minutes. If needed, bake for a few more minutes so that the pavakkai becomes crisp.
