Pavakkai (Bitter Gourd) is a bitter vegetable that many tend to shy away from. These crispy chips will change your feelings towards the vegetable and keep you munching, one chip after the other.

Ingredients

  • 6 pavakkai (bitter gourd) sliced
  • ¼ tsp turmeric powder
  • 1 tsp Kashmiri red chili powder (adjust to taste)
  • 1 tsp coriander powder
  • 2 tbsp rice flour
  • ¼ cup besan flour (chickpea/garbanzo flour)
  • 1 tbsp corn flour
  • ½ tsp ajwain
  • ¼ cup water
  • salt to taste
  • cooking oil spray

Instructions

  • Add the sliced pavakkai to a mixing bowl.
  • Add turmeric powder, Kashmiri red chili powder, coriander powder, and salt to the bowl.
  • Mix the pavakkai slices very well.
  • In a separate bowl, add rice flour, besan flour, corn flour and ajwain. Add water and mix well. Transfer this to the bowl with the pavakkai.
  • Mix well. The slices should be well coated. Set aside for 10 minutes.
  • Preheat the oven to 400 degrees. Line a baking tray with parchment paper.
  • Arrange the slices on the tray. Spray the cooking oil over the slices.
  • Place the tray in the preheated oven and bake for 25 minutes. If needed, bake for a few more minutes so that the pavakkai becomes crisp.
  • Remove from the oven and serve hot.
