This tasty fried rice is full of fresh flavors and tender shrimp. It's sure to become a family favorite.

Ingredients
15piecesmedium shrimp(peeled and deveined)
1 cupfrozen mixed vegetables
1½tbspsoy sauce
1½tbspstir-fry sauce
1½tbspred chili paste(adjust to taste)
1tspsugar
1tspwhite pepper
2tbsp sesame oil
1½cupBasmati rice
2cupswater
1 tbspvegetable oil
salt to taste
10fresh basil leaves
Instructions
Wash rice and add to Instant Pot.
Add water, vegetable oil and salt.
Pressure cook on high for 5 minutes. Once done, keep warm for 5 minutes.
Quick release pressure and transfer to a wide tray. Use a fork to remove lumps, if any, and let rice cool.
In a wok, add sesame oil. Once hot, add shrimp and saute for 1 minute.
Add onion and garlic and saute for 2 minutes.
Add mixed vegetables and saute for 2-3 minutes.
Combine soy sauce, stir-fry sauce, chili paste and sugar in a small bowl. Add to the shrimp and vegetables.
Add cooked rice and mix well. Cook for 2-3 minutes.
Add salt to taste and white pepper. Garnish with fresh basil leaves and serve hot.
Notes
The rice can be prepared a day ahead of time or leftover rice can also be used.
If using pressure cooker, Rice: Water is 1 ½ : 2 ½. Add vegetable oil and salt to taste to the rice. Cook for one whistle and release pressure naturally. Let rice cool to room temperature.
