Shrimp Fried Rice

This tasty fried rice is full of fresh flavors and tender shrimp. It's sure to become a family favorite.

Equipment

  • Instant Pot

Ingredients

  • 15 pieces medium shrimp (peeled and deveined)
  • 1 cup frozen mixed vegetables
  • tbsp soy sauce
  • tbsp stir-fry sauce
  • tbsp red chili paste (adjust to taste)
  • 1 tsp sugar
  • 1 tsp white pepper
  • 2 tbsp sesame oil
  • cup Basmati rice
  • 2 cups water
  • 1 tbsp vegetable oil
  • salt to taste
  • 10 fresh basil leaves

Instructions

  • Wash rice and add to Instant Pot.
  • Add water, vegetable oil and salt.
  • Pressure cook on high for 5 minutes. Once done, keep warm for 5 minutes.
  • Quick release pressure and transfer to a wide tray. Use a fork to remove lumps, if any, and let rice cool.
  • In a wok, add sesame oil. Once hot, add shrimp and saute for 1 minute.
  • Add onion and garlic and saute for 2 minutes.
  • Add mixed vegetables and saute for 2-3 minutes.
  • Combine soy sauce, stir-fry sauce, chili paste and sugar in a small bowl. Add to the shrimp and vegetables.
  • Add cooked rice and mix well. Cook for 2-3 minutes.
  • Add salt to taste and white pepper. Garnish with fresh basil leaves and serve hot.

Notes

  • The rice can be prepared a day ahead of time or leftover rice can also be used. 
  • If using pressure cooker, Rice: Water is 1 ½ : 2 ½. Add vegetable oil and salt to taste to the rice. Cook for one whistle and release pressure naturally. Let rice cool to room temperature. 
  • Smaller shrimp also work well for this recipe.
