Ingredients
10frozen parottas
1onion(thinly sliced)
1cupcabbage(thinly sliced)
½cupcarrot(thinly shredded)
1tomato(pureed)
2green chilies(finely chopped)
1tbspginger garlic paste
½tspturmeric powder
1tbspmasala powder(you can also use red chili powder)
1tbspcoriander powder
1tspgaram masala powder
1tspground black pepper
6curry leaves
¼cupoil
salt to taste
cilantro (for garnishing)
Instructions
Cook the parottas on a tawa or in the microwave for a minute each. Chop into pieces and set aside.
Add oil to a large nonstick frying pan.
Once hot, add onions and saute for 1 minute.
Then, add ginger garlic paste and green chilies. Saute for 1 minute.
Add turmeric powder, masala powder and coriander powder and mix well.
Pour in the tomato puree and mix.
Then, add the chopped parotta and toss.
Add cabbage, carrots, garam masala, black pepper powder and curry leaves. Saute for 2-3 minutes. The vegetables should still be crunchy.
Add salt to taste and keep tossing to prevent burning at the bottom of the pan.
Garnish with cilantro and serve hot with any raita of your choice.
