Vegetable Kothu Parotta is a dish made from layered bread that is chopped and tossed in vegetables and spices. A dish that has great flavors like this one is sure to satisfy taste buds of all ages.

Ingredients

  • 10 frozen parottas
  • 1 onion (thinly sliced)
  • 1 cup cabbage (thinly sliced)
  • ½ cup carrot (thinly shredded)
  • 1 tomato (pureed)
  • 2 green chilies (finely chopped)
  • 1 tbsp ginger garlic paste
  • ½ tsp turmeric powder
  • 1 tbsp masala powder (you can also use red chili powder)
  • 1 tbsp coriander powder
  • 1 tsp garam masala powder
  • 1 tsp ground black pepper
  • 6 curry leaves
  • ¼ cup oil
  • salt to taste
  • cilantro (for garnishing)

Instructions

  • Cook the parottas on a tawa or in the microwave for a minute each. Chop into pieces and set aside.
  • Add oil to a large nonstick frying pan.
  • Once hot, add onions and saute for 1 minute.
  • Then, add ginger garlic paste and green chilies. Saute for 1 minute.
  • Add turmeric powder, masala powder and coriander powder and mix well.
  • Pour in the tomato puree and mix.
  • Then, add the chopped parotta and toss.
  • Add cabbage, carrots, garam masala, black pepper powder and curry leaves. Saute for 2-3 minutes. The vegetables should still be crunchy.
  • Add salt to taste and keep tossing to prevent burning at the bottom of the pan.
  • Garnish with cilantro and serve hot with any raita of your choice.
