Avarakkai Kootu is rich in fiber and protein. It's made with avarakkai (broad beans), dhal and spices. This dish pairs well with roti and rice.

Ingredients
- 2 cups avarakkai (chopped)
- ¼ cup onion (chopped)
- 4 green chilies
- ½ cup moong dhal
- ¼ tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp urad dhal
- 6 curry leaves
- 1½ cups water
- 1 tsp ghee
- 2 tsp oil
- salt to taste
Instructions
- Wash moong dhal and add it to a pressure cooker.
- Add water, avarakkai, onions, green chillies, turmeric powder and salt to the pressure cooker.
- Cook for 1 whistle and release pressure naturally.
- Mix the kootu and adjust consistency by adding more water, if needed. Set aside.
- Add oil to a small pan. Once hot, add cumin seeds and urad dhal.
- Once the cumin seeds sizzle and urad dhal turns golden brown, add curry leaves.
- Then, remove from heat and pour over kootu.
- Add ghee to the kootu and serve with roti or rice.
