Instant Ragi Dosa
This Instant Ragi Dosa is great to have up your sleeve because of how easy it is. It comes together with a quick mix, making it the perfect breakfast for a busy morning.

Ingredients
- 1 cup ragi flour
- ½ cup rice flour
- ½ cup sooji (also known as rava)
- 1 tbsp yogurt
- ⅓ cup chopped onion
- 3 green chilies (finely chopped) (adjust to taste)
- ¼ tsp cumin seeds (coarsely ground)
- ¼ tsp black pepper (coarsely ground)
- ½ inch ginger (grated)
- 10 curry leaves (chopped)
- 3-4 cups water (as needed)
- salt to taste
Instructions
- Add ragi flour, rice flour and sooji to a mixing bowl.
- Next, add chopped onions, green chilies, curry leaves, ginger, yogurt, and salt.
- Pour in 3 cups of water and mix with a whisk. The batter should be watery (adjust water as needed).
- Once the tawa (pan) is hot, pour the batter. Small holes should form on the dosa. Add oil and let it cook.
- Once golden brown, flip and apply oil on to the other side. Cook until crisp.
- Before pouring the next dosa, make sure to mix the batter well. If it starts to become thick, add water as needed.
- Serve hot with chutney.
