Kale Thuvattal is a tasty way to incorporate these healthy greens into your meals. It's quick to make and will make this hearty green a family favorite.

Ingredients
- 1 lb kale (about 1 bunch)
- 3 tbsp moong dhal (soaked in 1 cup water)
- 3 dry red chilies (adjust to taste)
- 2 tbsp oil
- 1 tsp urad dhal
- ½ tsp mustard seeds
- salt to taste
Instructions
- Wash moong dhal and soak in 1 cup water for at least ½ hour.
- Wash kale leaves thoroughly. Remove the thick stem in the middle and chop into small pieces. Set aside.
- Add oil to a frying pan. Once hot, add mustard seeds, urad dhal and dry red chilies.
- Once mustard seeds crackle, add chopped kale leaves.
- Saute for 1 minute and add soaked moong dhal.
- Saute for 2-3 minutes and add salt to taste.
- Then, cook on medium flame until the moong dhal and kale are well cooked.
- Cook for 2-3 minutes. All the water should be absorbed.
- Serve hot as a side dish.
