Made with black rice, coconut, cardamom and sugar, Kavuni Arisi is a simple yet popular Chettinad dessert. The black rice has a chewy texture and is very nutritious.

Ingredients

  • 1 cup black rice
  • cups water
  • cup sugar (you can also use jaggery)
  • cup grated coconut
  • ½ tsp cardamom powder
  • 1 tsp ghee

Instructions

  • Wash the rice and soak in 2½ cups of water. Soak overnight or for at least 6-8 hours.
  • Add the soaked rice and water used to soak the rice into a pressure cooker. Cook for 3-4 whistles.
  • Once the pressure is released, check to see if the rice is cooked. If not, add ½ cup water and cook for 1-2 more whistles.
  • Transfer the cooked rice to a pan.
  • Add grated coconut, sugar, cardamom powder and ghee. Cook for a few minutes on low flame. The kavuni arisi will start to loosen once the sugar is added.
  • Mix well and serve as a dessert.
