Made with black rice, coconut, cardamom and sugar, Kavuni Arisi is a simple yet popular Chettinad dessert. The black rice has a chewy texture and is very nutritious.

Ingredients
- 1 cup black rice
- 2½ cups water
- ⅓ cup sugar (you can also use jaggery)
- ⅓ cup grated coconut
- ½ tsp cardamom powder
- 1 tsp ghee
Instructions
- Wash the rice and soak in 2½ cups of water. Soak overnight or for at least 6-8 hours.
- Add the soaked rice and water used to soak the rice into a pressure cooker. Cook for 3-4 whistles.
- Once the pressure is released, check to see if the rice is cooked. If not, add ½ cup water and cook for 1-2 more whistles.
- Transfer the cooked rice to a pan.
- Add grated coconut, sugar, cardamom powder and ghee. Cook for a few minutes on low flame. The kavuni arisi will start to loosen once the sugar is added.
- Mix well and serve as a dessert.
