Mixed Vegetable Pirattal

Ingredients

  • 1 cup onion (chopped)
  • 1 cup tomato (chopped)
  • 6 garlic cloves
  • 2 cup potato (cubed)
  • ½ cup carrot (cubed)
  • ½ cup peas
  • 2 cup cauliflower (cut into florets)
  • ¼ tsp turmeric powder
  • 2 tsp coriander powder
  • 2 tsp masala powder
  • ½ tsp chili powder (optional)
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • ¼ tsp black pepper
  • 2 tbsp oil
  • salt to taste

Instructions

  • Heat oil in a pan. Once hot, cumin seeds, fennel seeds and black pepper.
  • Once cumin seeds brown, add onions and garlic. Saute for 2-3 minutes. The raw smell should fade.
  • Add carrots and peas and saute for 3-4 minutes. Then add tomatoes.
  • Once the tomatoes are soft, add turmeric powder, coriander powder and masala powder. Saute for 1 minute.
  • Add potatoes and salt. Mix well.
  • Cover with a lid and cook for 5 minutes on medium flame. The vegetables should be half cooked.
  • Then, add cauliflower florets and mix well. Cook until all vegetables are well done.
  • Serve hot as a side dish.
