Vegetable Kothu Parotta is a dish made from layered bread that is chopped and tossed in vegetables and spices. A dish that has great flavors like this one is sure to satisfy taste buds of all ages.

Ingredients
- 10 frozen parottas
- 1 onion (thinly sliced)
- 1 cup cabbage (thinly sliced)
- ½ cup carrot (thinly shredded)
- 1 tomato (pureed)
- 2 green chilies (finely chopped)
- 1 tbsp ginger garlic paste
- ½ tsp turmeric powder
- 1 tbsp masala powder (you can also use red chili powder)
- 1 tbsp coriander powder
- 1 tsp garam masala powder
- 1 tsp ground black pepper
- 6 curry leaves
- ¼ cup oil
- salt to taste
- cilantro (for garnishing)
Instructions
- Cook the parottas on a tawa or in the microwave for a minute each. Chop into pieces and set aside.
- Add oil to a large nonstick frying pan.
- Once hot, add onions and saute for 1 minute.
- Then, add ginger garlic paste and green chilies. Saute for 1 minute.
- Add turmeric powder, masala powder and coriander powder and mix well.
- Pour in the tomato puree and mix.
- Then, add the chopped parotta and toss.
- Add cabbage, carrots, garam masala, black pepper powder and curry leaves. Saute for 2-3 minutes. The vegetables should still be crunchy.
- Add salt to taste and keep tossing to prevent burning at the bottom of the pan.
- Garnish with cilantro and serve hot with any raita of your choice.
